This time of year, has always been a favorite of mine. You start planning the big family dinners, reaching out to your loved ones and setting a date to get together. You decorate your house with all the fun festive décor.
With a global pandemic upon us, it’s safe to say we’re having to do things a little different this time around. With smaller gatherings, you’re picking and choosing who you will have at your holiday gathering**. Maybe you have a mom or dad or grandma and grandpa who can’t attend because it’s not safe for them to take that risk.
Now more than ever I think it’s really important to keep positive and be thankful for what we can do and what we have. It’s easy to look at things in such a negative perspective, but try to focus on the good. Maybe certain loved ones can’t attend your family gathering, but rather be thankful that their still here and they are safe. Take comfort in knowing that by you not having them there, you too are doing your part in protecting them and yourself.
Here’s some parting advice and a holiday recipe I would like to share with everyone...
If you haven’t already, I encourage you all to tell your family you love them. Let them know your thinking of them and even though you might not be able to be there in person that you are with them in heart.
Ambrosia salad
1 small container of cool whip
½ cup of sour cream
1 can of mandarin oranges (drained)
1 can of crushed pineapple
10-oz jar of maraschino cherries (drained)
1 cup of shredded coconut
2 cups of mini marshmallows (the multi colored are my personal favorite)
¾ cup of chopped pecans (optional)
Mix sour cream and cool whip in a large bowl. Mix in all other ingredients.
Serve right away or refrigerate.
**CDC and Minnesota Department of Health are mandating that gatherings be no more than 6 people from no more than 2 households total.
