From a new flower bed, a new garden at Seashore (as seen above), new craft ideas, to bingo and scavenger hunts, the last few months have been trying. I have been amazed by the staff, clients, and their flexibility. However a little begrudging at times, they have been wonderful.
The new normal, as we have been saying for several months now, is getting on some nerves, and the staff are doing everything that they can to keep spirits up with our clients. We take extra van rides to go for a walk in the park or to just drive around the lake. We’re also finding special things that each client is really interested in, getting creative with them, and putting a plan in place. All I can say is wow! I work with an amazing team of men and women, who are putting the person-centeredness into their work.
We have worked on plans to make sure that if there are appointments, we make our schedules different. For some of the clients, this is very difficult, but the staff have helped them to understand that a little flexibility means we don’t have to shower two times today. We have found out that quite a few of our clients love Pinterest, and my palate loves the recipes that they have found on there. The following is our favorite at Beacon House.
Cucumber Tomato Salad
1 long English cucumber - sliced
2-3 tomatoes - diced
½ red onion - sliced
1 tbsp fresh herbs (parsley, basil and/or dill)
2 tbsp olive oil
1 tbsp apple cider vinegar
salt & pepper to taste
Combine all ingredients in a bowl and toss well. Refrigerate at least 20-minutes before serving.
