Summer is near so let's do something fun!

With all that is going on around the world and over a year into COVID-19, if there is one thing everyone could use, it’s a break! Summer is my absolute favorite season; warm weather, BBQ’s, beach days, fishing, camping… The list is endless.

It’s a pretty popular season for Odayin House and Briar Rose also. They love a good bonfire with ‘smores, burgers on the grill, or grabbing the fishing poles and heading to the nearest dock to catch some fish. One of our favorite outdoor games to play here is Bocce Ball. To be honest, I had never heard of it until I started working for Thrive. I was invited to play by a few of the guys one day and it was a blast!

Summer might look a little different this year with COVID-19, but we certainly plan to make the best of it and I hope you can too! So, relax. Have fun. If you can’t have a beach day, lounge in the kiddie pool at home. Have a BBQ with a few close friends. Maybe even try a game of Bocce Ball.

Here is a recipe for my favorite side dish to bring to any BBQ.

Italian Pasta Salad

  • 2 boxes of rotini pasta

  • 2 bell peppers (any color)

  • 2 blocks of cheese (any kind, but I like Pepper Jack & Colby)

  • 2 bags of mini pepperonis

  • 1 can of sliced black olives (optional)

  • 1 large bottle of Italian dressing

While your pasta is cooking, chop your cheese & peppers and add them to your bowl along with olives and pepperoni. After your pasta is cooked, you will need to cool it with cold running water. When your pasta is cool mix in other ingredients and 1-bottle of Italian dressing. Mix and refrigerate for 1-hour before serving.
